WHAT. Take-home pasta kits with marvelous shapes & sauces.

WHY. I love Bologna. The food and city. It’s Mecca for fresh egg & filled pasta, and home to the best pasta artisans (sfoglina) in the world. So, I committed to learning traditional pasta techniques and studied with a master there.

HOW. Sensational ingredients + a giant rolling pin. A taste that gives smiles and satisfaction. Everything by hand for maximum quality.

WHEN. This is a pop-up style pasta lab. I sell two ways. Weekly pre-orders from a small, rotating menu, and special orders, with requests sent by email.

WHERE. Order online. Then either Pick up in Leaside, Toronto at the specified pick-up day/pick-up time-window, or, delivery is available to most of the GTA for a reasonable fee.

Why Handmade?

SUBLIME TEXTURE. Handmade pasta is mechanically different from machine made pasta. When done right, it's full of tiny air bubbles to give a light, bouncy bite. The wood rolling pin and board also impart a slightly rough exterior texture that sauces love to cling to. These features give the pasta life. Making dough with steel machines tends to squeeze the air out, compress the dough, and leave a smooth surface. This yields a relatively flat, dense pasta. Sad.

BEAUTIFUL SHAPES. The pasta of Bologna is art. It’s a serious thing. To make the shapes well takes time, so few people do it these days. Sadly, it is nearly impossible to find high quality Bolognese pasta in Toronto.
