Tortellini in Brodo
One of Bologna’s most famous dishes. Perhaps my all time favourite. I could eat this daily.
In North America, tortellini can refer to many fillings. In Bologna, tortellini means one thing. And, unfortunately, it’s nearly impossible to find the authentic tortellini locally.
They are small, beautiful shapes, made one way. The filling is mostly a combination of the region’s most delicious meats. If it has a three-cheese filling, I’m sorry. It’s not really tortellini.
And they are almost always served in the most incredible, flavoursome meat broth. Mine simmers for a minimum of 12-hours to refine the flavour. It’s so satisfying.
Making these by hand is very labour intensive. So, I only make small batches. Get them while they’re available. You won’t be disappointed.
